Measuring from an aircraft flying at 100 m/s or a satellite flying at 7 km/s is not the same thing when you want to measure current velocities with an accuracy better than 0.1 m/s. It is not just about the speed of the platform: many effects combine to make a "measured velocity". One of them is the width of the antenna lobe: we had the first scientific data acquired with the IETR narrow-beam "Karadoc" system and the much broader beam of the KuROS system.  You can find all the details of the analysis in this paper by Louis Marie et al. : https://os.copernicus.org/articles/16/1399/2020/
